I know what most of you are thinking! Omg, this looks so hard to make… let me tell you.. easy, delicious and great for celebrations. Enough said, lets dive into the how to make!

  1. 1 1/2 Cup Flour,
  2. 1 Cup Sugar
  3. 3 Tablespoons Coco
  4. 1 teaspoon baking soda
  5. 1/2 teaspoon salt
  6. 6 tablespoons vegetable oil
  7. 1 tablespoon vinegar
  8. 1 teaspoon vanilla extract

Fudge Icing:

  1. 1-1/2 cup confectioner’s sugar
  2. 3 tablespoons coca
  3. 1/4 cup melted butter or margarine
  4. 3 tablespoons hot coffee
  5. 1 teaspoon vanilla extract

Combine sugar and cocoa. Blend in butter. Gradually add the coffee and vanilla and beat well. Tip: You may not need that much coffee, so add slowly and use just what you need). Also known as depression cake, the batter for this quirky old-school chocolate cake is stirred together right in the baking pan (no mixing bowl required!), which is how it earned its name. The cake recipe also contains no eggs or milk, which is why it was a popular treat during lean times. Wacky Cake is delicious eaten on its own, especially with a cold glass of milk, but we added a layer of fudgy frosting and chopped toasted pecans to make it more decadent! And walahhhh!! You have a delicious homemade chocolatey cake!

Bake in greased 8×8 pan for about 35 minutes at 350 deg f.

Don’t forget to ENJOY IT with a cold glass of milk!
